Nearly a century old, the Michelin guide prizes restaurants with stars, which are divided into three categories according to the following criteria:

1 Michelin star: "A very good restaurant in its category" (Une très bonne table dans sa catégorie)

2 Michelin stars: "Excellent cooking, worth a detour" (Table excellente, mérite un détour)

3 Michelin stars: "Exceptional cuisine, worth a special journey" (Une des meilleures tables, vaut le voyage).

Three-star restaurants in Tokyo include Joël Robuchon’s Tokyo outpost and the celebrated Sukiyabashi Jiro Honten, which was also the theme of the Jiro Dreams of Sushi documentary.
