Why did you choose to become a chef?
Simply, because I love food and I want to share this passion with others.
What makes you different from your competitors?
Being French and serving authentic French food gives me an edge over others.
Who is your favourite chef and why?
I am fond of different styles of food because of which I have many favourite chefs.
How has doing what you do changed your life?
It has not changed my life but in fact taken over it and become my life.
You a working woman with a husband and children. How do you maintain a work-life balance?
By having a very good team at work to rely on and at home I am blessed to have people working for me for more than 30 years.
What’s the best way to deal with failure?
Get up and try again! Never give up.
How did Cafe Flo, the brand come about?
The name has been derived from my name, Florence.
Tell us more about your cooking ideology?
I believe in using fresh ingredients and keeping it simple.
What sparked your interest in opening a restaurant in Pakistan?
Initially, I intended to open a creperie at the Alliance Francaise, an initiative that promotes French cuisine, but my love for food brought me where I am today.
How has the Pakistani food industry changed over the past years?
The industry has changed tremendously over the past years and people now are becoming really gourmet by taking pleasure in fine dining.
Any advice for aspiring female chefs?
They really need to be very passionate about their work, as it is a very stressful job.
