Near the eve of Ramadan, it’s not so much a challenge to choose the iftar menu as it is to wake up mid-sleep and decide what to have for sehri. To kickstart your day, we suggest a stuffed paratha full of yummy goodness. Not only is it easy to cook, but is also the perfect way to give you the energy boost you need while fasting. Ingredients:



•  Whole wheat (one cup) with water (according to requirement)

•  Egg (one)

•  Oil (one tbsp)

•  Salt (to taste)

•  Black pepper and/or red chilli powder (optional)

•  Chopped onion

•        Coriander (optional)

Method:

Step one: Mix flour, salt and water and knead the mixture. Keep it aside to set.

Step two: In a bowl, add egg, salt, pepper, fine chopped onion, coriander and chilli powder. Beat it well.

Step three: Using the kneaded flour, make two balls and use a rolling pin to make two round, flat rotis.

Step four: On a pre-heated pan, add oil and then carefully place one roti on it.

Step five: After letting it cook for a few minutes, pour the egg mixture in the middle and let it spread.

Step six: Immediately place the other roti on top and press it down on the egg mixture, so it sticks.

Step seven: Put the flame on low heat and turn the paratha upside down while adding a little more oil, so the egg inside is cooked well.

Step eight: Serve the paratha crisp and hot when it is golden brown from both sides.
