Comfort food: Keeping warm with kebabs

Swat valley has witnessed a record snowfall, escalating the blistering cold in Mingora which, though it has created problems for its residents, has done wonders for chapli kebab merchants.


Muhammad Haroon hails the kebabs as being the best food of the season adding that Mingora is the preferred destination. He said villagers like to have kebabs when they visit Mingora and he is no exception.

Khyber-Pakhtunkhwa is known for its chapli kebabs where it is the favourite dish of the majority of its citizens and is often served to guests.

Though available throughout the year, winter is the best season and merchants enjoy it by keeping themselves and their pockets warm. “Winter is the best season for our business as our sales increase threefold,” said Ghani Rehman.

There is no other food that compares with kebabs, Faisal Khan, a student from Mangalwar told The Express Tribune.

“I have been eating kebabs since my childhood but the more I have them the more I love them,” said Syed Zaman, a resident of Mingora. “In winters, I have them daily.”

Chapli kebabs are renowned for their rich taste with minced meat, mutton fat, crushed pomegranate seeds, eggs, tomatoes, garlic, onions, coriander, chillies and maize flour.
