- Chop vegetables ahead of time: It’s best to do things in advance especially when you are staring at a busy week. Take vegetables in abundance and chop them once a week (instead of daily) and store them in the fridge.
- Reach for baking mixes: Use mixes that are readily available on the market instead of baking from scratch. You can give a personal touch by adding something like fresh fruit, citrus zest or nuts.
- Stock necessary basics: Be it salt, pepper, flour, sugar or oil, stock up to make things smoother.
- Stay organised: Keep all your tools used to prepare meal in an organised way. This will also make you enjoy the cooking experience more.
- Make enough for leftovers: If you are preparing something delicious and special, increase the portion. Store it and later reheat whenever you wish to eat again.

Really, chopping doesn't take that long unless you're doing it in large quantities. But you can chop some things a day or two in advance provided you properly dry and store them (ie, in airtight containers).
Being organized and cultivating an appreciation for cooking are definitely the most important components. It took some experience before I realized that cooking can be a great way to unwind - not something to stress over. Easy recipes, fresh, quality ingredients and an understanding of the basic foundations of cookery and you're good to go!
Over time you'll figure out some of your own hacks, what stuff you can freeze in advance to make it easier to cook a meal when you need it (ie, unbaked lasagna, mutton yakhni for pullao, fruits for milkshakes or smoothies) but really, only do this for meals that take longer to prepare unless you do some of the prep in advance. There is no point waiting for chicken to defrost for a karhai when you can easily buy a fresh one on the way home from work and it tastes 100 times better.
Chopping vegetable in advance for a week doesn't make sense.
